You leave Accra at 8:00, and you leave at 8:00, because the palm sets the schedule, not us. By ten you're standing under a palm in the hills above Aburi while the tapper opens the crown and taps into it. What comes out is white, cloudy, faintly fizzing and still warm from the tree. At this hour it's sweet — closer to coconut water with an edge on it than anything you'd call a drink. Leave the same calabash until two in the afternoon and wild yeast will have turned it sour and noticeably strong. You taste it early. You taste it again later. The difference between those two mouthfuls is the entire point of the morning. Then the still. Two kerosene tins over stacked firewood, a copper coil running through a bucket of cool water, akpeteshie coming off the coil drop by drop. Nobody measures the strength — no hydrometer, no label, no proof statement, just a man who has been doing it for years. You taste it hot off the coil. Lunch on the ridge. Then the afternoon at the Tetteh Quarshie estate, where cocoa entered Ghana in 1876 from a handful of pods carried home in a bag. From there, a walk through Aburi Botanical Gardens — Ghana's oldest, laid out in 1890 as a hill-station retreat from the coastal heat, its silk cotton and mahogany avenues still standing over a century later. This is not a visitor centre. No tasting room, no gift shop, no till. A working palm, a working still, and a tapper Akwaaba engages directly.
